Salers Cheese

Salers cheese from the volcanic region in the mountains of Auvergne, central France is a pressed, cheese made from unpasteurized Salers cow's milk between mid April and mid November, and said to be at it's best between September and March, after maturing for nine months.

The 40kg truckles are circular in shape.

Similar to the Cantal cheese, Salers cheese is thought to have been made for at least 2000 years, and regulated by the "Appellation d'origine contrôlée" since 1979.

Salers, along with the Saint-Nectaire and Cantal cheeses, became popular after the Maréchal de Sennecterre served it at the table of Louis XIV.

It is circular in shape, weighing around 40 kg.

The Auvergne is a largely mountainous region in central France, part of the Massif Central. In summer the climate is hot and dry, ideal for walking, hiking and horse-riding while winters are comparatively harsh, making ideal conditions for skiing. So the gastronomy of the region is geared to satisfying hearty appetites.

Auvergne cheeses such as Cantal, Salers, St Nectaire, Tôme d'Auvergne and Bleu d'Auvergne are renowned worldwide. However the gastronomy of the area is less well-known.

Les chemins St Jacques de Compostelle
The most well-known and impressive of the volcanic cones ("puys") is the Puy de Dôme close to Clermont-Ferrand, one of the departure points for pilgims joining the Chemin St Jacques "Via Podiensis" route to the shrine of St James at Santiago de Compostela in northern Spain.

The pilgrim route passes through the the Parc Naturel Régional des Volcans d'Auvergne, visiting several shrines of the enigmatic Black Madonnas en route - at Besse en Chandesse, Orcival, Murat, Mauriac, Aurillac for example.

"Franchesse is set in 32 acres of forest and meadow, on a long-distance waymarked equestrian trail, and local trails, on the Correze (19) / Cantal (15) border : approx 50 miles WSW of Clermont Ferrand, 20 miles from the new A89 motorway (Clermont Ferrand/Bordeaux) at Ussel.

Easy access and ample parking for HGVs.

There are currently twelve loose boxes available (attached to house) for temporary boarding, plus pasture (electric fenced) and 25x40m outdoor sand arena.

Gite or B&B holiday accomodation available - ideal for guests who wish to explore the area with their own horse.

"The Auvergne has breathtaking scenery - mountains, precipitous gorges, tumbling streams, many lakes and extensive wild forests; and is famous for it's wildflowers, it's cheeses, cascades, thermal spas, chateaux and the many romanesque churches with their medieval black Madonnas set amidst breathtaking mountain scenery.
Water is an important element in the region - the mighty Dordogne river rises at le Mont Dore, and feeds many lakes as it winds it's way seaward. There are thermal spas at La Bourboule and Mont Dore etc.
There are myriad facilities for water sports as well as fishing, swimming, riding, walking, hang-gliding, climbing... plus skiing in winter at the stations de ski at Super Besse and Le Lioran.
The cultural tradition is very much alive, with much traditional custom, music and song.
